Kimberley Seldon's Go-to Mocktail Recipe: Aqua Fresca

We first met Kimberley Seldon at the 2016 Collingwood Holiday House Tour where she led an entertaining workshop. This talented designer manages a full-service interior design/build shop and currently has projects building and renovating in Creemore, Campbellville, King City and Toronto. She shares her 15-step project management strategy through her online coaching community, Business of Design.

We asked Kimberley her secrets for a successful summer gathering. "Like interior design, if a party is going to be successful, it takes planning," says Kimberley. "As a rule, we always have a signature cocktail and mocktail ready to go when the first guest arrives. If I’m entertaining 12 or more I typically cater. It sounds extravagant, but it actually is no more expensive than me doing it all myself, and it means I can really enjoy the party and my guests."

Kimberley's go-to mocktail? Aqua Fresca. Here's the recipe to try for your next summer gathering:

Aqua Fresca

  • 1 part pineapple juice (can be substituted with any juice, i.e. pomegranate)

  • 3 parts sparkling water

  • Clementine slices

  • Fresh mint from the garden


Combine pineapple juice and sparkling water in a large pitcher. Stir and pour into glasses. Garnish each glass with a slice of clementine and fresh mint from your garden.
